Learning more about our health and nutrition is why I chose this recipe obviously taking the high road and eliminating the bread – but adding so much more ~ color! The steps in this recipe will yield the basic egg dish. There are an assortment of delicious food items one can add for their own flavor and taste choice. Enjoy!
You will be using;
skillet, skillet lid, and spatula.
Ingredients: green pepper, cut into rings; salt & pepper; cheese; tomato slices; egg (s)

Grease skillet as you would for frying eggs. Place green pepper ring (s) in heated pan. Crack open egg, putting one egg in each pepper ring. Keep pepper & egg cooking at a low to medium temperature (actually you are poaching this egg) under a lid. When the egg is setting up (cooking time will vary about 6 -8 minutes). Then top with tomato slices, seasonings, and cheese. Be mindful here of the toppings that need more time to cook, in this recipe more cooking time was given to the tomatoes, as the tomatoes were added before the cheese. Then add cheese, allowing to melt. Remove this colorful, favorful, egg dish from skillet.
Tips: don’t slice pepper rings too thin, it has to hold an egg. Topping items to add to egg; mushrooms, meat bits, bacon, ham, sausage, onions etc. The bigger the pepper the more room you’ll have for toppings.
